Tzatziki Recipe with Varsano Variations

Tzatziki

  • Ingredients

    • 2 cups strained Greek yogurt
    • 2 Persian cucumbers or 1 English cucumber, remove seeds, peel, and cut in half crosswise. Persian cucumbers work best, but an English cucumber is OK too.
    • 2 garlic cloves (finely chopped or use garlic press)
    • 1/2 cup preferably fresh dill (finely chopped). Dried dill works if fresh is not available.
    • Salt and ground black pepper, to taste
  • Directions

    1. Grate cucumber with to desired thickness. Squeeze out excess moisture of grated cucumber with a towel or cheesecloth.
    2. In a small bowl, combine the yogurt, garlic, cucumber, and dill. Season to taste with salt and pepper. Cover and place in the refrigerator.
  • Varsano Variation

    • Cucumber may be diced instead of grated
    • Raw garlic cloves are too strong for me so I often use garlic powder
    • Add Olive Oil
    • Add dried or fresh chopped mint
