Salat Katzutz Israeli Salad

  • Ingredients

    • 2 cups diced cucumber
    • 2 cups diced tomato
    • 1/3 cup minced onion
    • ½ cup chopped fresh flat-leaf parsley
    • 2 tablespoons fresh lemon juice
    • 1 tablespoon extra-virgin olive oil
    • Salt and fresh ground black pepper to taste
  • Directions

    • In a mixing bowl, combine all ingredients.
    • Serve immediately or refrigerate in a sealed container.
  • Varsano Variation

    • Use Persian cucumbers.
    • Shock onions.
    • Tahini Dressing: Tahini, Chopped Parsley, Salt, Water, Olive Oil, and Lemon Juice.
    • Finish with sumac
