Salat Katzutz Israeli Salad

Ingredients
- 2 cups diced cucumber
- 2 cups diced tomato
- 1/3 cup minced onion
- ½ cup chopped fresh flat-leaf parsley
- 2 tablespoons fresh lemon juice
- 1 tablespoon extra-virgin olive oil
- Salt and fresh ground black pepper to taste

Directions
- In a mixing bowl, combine all ingredients.
- Serve immediately or refrigerate in a sealed container.

- Use Persian cucumbers.
- Shock onions.
- Tahini Dressing: Tahini, Chopped Parsley, Salt, Water, Olive Oil, and Lemon Juice.
- Finish with sumac
