Salmon with Lemon and Oregano

Ingredients
- 1 lb salmon fillet (preferably wild Sockeye or Coho)
- Zest of 1 medium lemon
- 1 1⁄2 tsp lemon juice
- 1 tsp dried oregano
- 2 cloves garlic (minced)
- 1 tsp salt
- ½ tsp fresh ground black pepper
- 1 Tbsp olive oil
- 2/3 cup dry white wine (optional)
- 1 shallot or 1/4 red onion, minced (optional)
- 1 tsp fresh parsley, chopped
- Lemon wedges

Directions
- Pre-heat broiler on medium-high heat. Alternatively, this dish may be prepared by sautéing in a frying pan.
- Remove pin bones from salmon. Leave whole fillet for family-style serving or cut into desired portion sizes (2-3 portions per pound).
- In a small mixing bowl, combine lemon zest, olive oil, oregano, garlic, salt and pepper.
- Rub mixture on salmon.
- Broiler or Range
- Broiler: Place salmon on oven-safe pan then broil for approximately 8-10 minutes or
- Range: Sauté over medium-high heat for approximately 3 minutes per side depending on thickness.
- Optional pan sauce: Remove cooked salmon and add a little olive oil to pan. Sauté shallots until soft and translucent, then deglaze pan with white wine and lemon juice, add additional spices as desired. Cook for 2-3 minutes until sauce thickens then our over salmon.
- Serve with fresh lemon wedges and chopped parsley.
