Salmon with Lemon and Oregano

  • Ingredients

    • 1 lb salmon fillet (preferably wild Sockeye or Coho)
    • Zest of 1 medium lemon
    • 1 1⁄2 tsp lemon juice
    • 1 tsp dried oregano
    • 2 cloves garlic (minced)
    • 1 tsp salt
    • ½ tsp fresh ground black pepper
    • 1 Tbsp olive oil
    • 2/3 cup dry white wine (optional)
    • 1 shallot or 1/4 red onion, minced (optional)
    • 1 tsp fresh parsley, chopped
    • Lemon wedges
  • Directions

    1. Pre-heat broiler on medium-high heat. Alternatively, this dish may be prepared by sautéing in a frying pan.
    2. Remove pin bones from salmon. Leave whole fillet for family-style serving or cut into desired portion sizes (2-3 portions per pound).
    3. In a small mixing bowl, combine lemon zest, olive oil, oregano, garlic, salt and pepper.
    4. Rub mixture on salmon.
    5. Broiler or Range
      1. Broiler: Place salmon on oven-safe pan then broil for approximately 8-10 minutes or
      2. Range: Sauté over medium-high heat for approximately 3 minutes per side depending on thickness.
    6. Optional pan sauce: Remove cooked salmon and add a little olive oil to pan. Sauté shallots until soft and translucent, then deglaze pan with white wine and lemon juice, add additional spices as desired. Cook for 2-3 minutes until sauce thickens then our over salmon.
    7. Serve with fresh lemon wedges and chopped parsley.
