Ensalada Shopska

  • Ingredients

    • 3 cups tomatoes, diced
    • 3 cups cucumbers, peeled and diced
    • 1 cup green pepper, seeded and diced
    • 1/2 of one medium onion, red, white, and/or green, diced
    • 1 cup crumbled feta cheese
    • 3 Tbsp Extra Virgin Olive Oil
    • 1 Tbsp Cider vinegar
    • Salt and pepper to taste
  • Directions

    • In a mixing bowl, combine all vegetables.
    • Spoon a portion of vegetables on a plate or bowl, then hand crumble cheese on top. If using a harder cheese, then use a box grater.
    • Dress with oil, vinegar, salt, pepper to taste.
  • Varsano Variations

    • Use Bulgarian Feta Cheese and season with Chubritsa.
    • Grill or scald peppers until black, then let steam in a covered bowl for 10 minutes and peel then dice. Grill Onions.
