Ensalada Shopska

Ingredients
- 3 cups tomatoes, diced
- 3 cups cucumbers, peeled and diced
- 1 cup green pepper, seeded and diced
- 1/2 of one medium onion, red, white, and/or green, diced
- 1 cup crumbled feta cheese
- 3 Tbsp Extra Virgin Olive Oil
- 1 Tbsp Cider vinegar
- Salt and pepper to taste

Directions
- In a mixing bowl, combine all vegetables.
- Spoon a portion of vegetables on a plate or bowl, then hand crumble cheese on top. If using a harder cheese, then use a box grater.
- Dress with oil, vinegar, salt, pepper to taste.

Varsano Variations
- Use Bulgarian Feta Cheese and season with Chubritsa.
- Grill or scald peppers until black, then let steam in a covered bowl for 10 minutes and peel then dice. Grill Onions.
