Salat Katzutz Israeli Salad
A basic healthy salad that compliments mezzes, falafel, and plethora of Sephardi dishes, it goes good with almost anything. Preparing this simple dish is also good practice for your knife skills. Try to make the cuts uniform for the perfect diced cucumber and tomato.

Ingredients
- 2 cups diced cucumber
- 2 cups diced tomato
- 1/3 cup minced onion
- ½ cup chopped fresh flat-leaf parsley
- 2 tablespoons fresh lemon juice
- 1 tablespoon extra-virgin olive oil
- Salt and fresh ground black pepper to taste

Directions
- In a mixing bowl, combine all ingredients.
- Serve immediately or refrigerate in a sealed container.

- Use Persian cucumbers.
- Shock onions.
- Tahini Dressing: Tahini, Chopped Parsley, Salt, Water, Olive Oil, and Lemon Juice.
- Finish with sumac
